Simple Tofu Quiche



A simple and savory vegan quiche made with crumbled tofu and mixed vegetables, seasoned with nutritional yeast and spices, baked into a golden pie crust.

Ingredients:

  • 1 block extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chopped vegetables such as spinach, bell peppers, mushrooms
  • 1/4 cup nutritional yeast
  • 1 tablespoon cornstarch
  • 1 teaspoon turmeric
  • 1/2 teaspoon black salt kala namak
  • Salt and pepper to taste
  • 1 pre-made vegan pie crust

Instructions:

Preheat the oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add onions and garlic, saut until softened

Add chopped vegetables to the skillet and cook until tender

In a mixing bowl, combine crumbled tofu, nutritional yeast, cornstarch, turmeric, black salt, salt, and pepper

Mix well

Stir in cooked vegetables into the tofu mixture

Press the pie crust into a pie dish

Pour the tofu-vegetable mixture into the pie crust

Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the crust is golden brown

Allow the quiche to cool slightly before slicing and serving
