Vegan Peanut Butter Cookie S'Mores



These Vegan Peanut Butter Cookie S'Mores are a fun take on the classic campfire treat. They'd be great at a party for kids or any other fun get-together. In between two soft and chewy peanut butter cookies, they have the creamy goodness of peanut butter and the sweet indulgence of chocolate and marshmallows.

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Vegan marshmallows
  • Vegan chocolate chips
  • Graham crackers

Instructions:

Warm the oven up to 175F 350C

Put peanut butter, maple syrup, and vanilla extract in a bowl and mix them together until the mixture is smooth

Salt, baking soda, and oat flour should be added

Mix everything together well

Make little balls out of the dough and put them on a baking sheet that has parchment paper on it

Use a fork to make a crisscross pattern in each ball

When the edges are golden brown, it's done baking

Take out of the oven and let cool all the way down

Put a vegan marshmallow and some chocolate chips on top of a peanut butter cookie to make an S'More

Put another peanut butter cookie on top and press down gently

If you want, you can serve it with graham crackers to dip them in
