These gluten-free and low-carb Paleo Banana Bread Muffins are a great treat for breakfast or a snack without making you feel bad. They're easy to make, moist, and tasty.
Ingredients:
- 3 ripe bananas
- 3 large eggs
- 1/4 cup almond butter
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 cup honey or maple syrup for sweetness
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
- 1/4 cup chopped nuts optional
Instructions:
Warm up the oven to 350F 175C and put paper liners in a muffin tin
Put the ripe bananas in a bowl and mash them until they are smooth
It's time to add the eggs, almond butter, coconut flour, almond flour, honey or maple syrup, baking soda, cinnamon, and a pinch of salt
Mix everything together well
You can add chopped nuts to the batter if you want to
Fill up each muffin tin cup about two thirds of the way to the top with batter
After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean
For a few minutes, let the muffins cool in the pan
Then, move them to a wire rack to cool completely
