Ingredients:
- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar for icing
- 1-2 tablespoons milk for icing
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt
In a separate larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined
Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them apart
Flatten each dough ball slightly with the back of a spoon
Bake for about 10-12 minutes or until the edges are golden brown
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
For the icing, mix powdered sugar and milk in a bowl to achieve the desired consistency
Once the cookies are fully cooled, drizzle or spread the icing over the cookies
Allow the icing to set before serving or storing the cookies
