Thai Jicama Salad



Thai Jicama Salad is a cool, crunchy salad with just the right amount of sweet, sour, and spicy flavors. This Thai-style dish is delicious and can be served as an appetizer or as a side.

Ingredients:

  • 1 jicama, peeled and julienned
  • 1 carrot, peeled and julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup roasted peanuts, crushed
  • 2 cloves garlic, minced
  • 1-2 Thai red chilies, minced adjust to taste
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil

Instructions:

Put the jicama, carrot, cucumber, red bell pepper, cilantro, and mint leaves in a large bowl and mix them together

Minced Thai red chilies, fish sauce, lime juice, brown sugar, and vegetable oil should all be mixed together in a different bowl using a whisk

Add the dressing to the salad and mix everything together well

Put crushed peanuts on top of the salad

Put it in the fridge for at least 30 minutes before serving so the flavors can mix

Enjoy! Serve cold
