Cherry-Chocolate Zucchini Bread



Indulge in the delightful combination of cherries and chocolate with a healthy twist of zucchini in this vegan bread. Perfect for breakfast or as a snack!

Ingredients:

  • 2 cups grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/2 cup chopped cherries

Instructions:

Warm the oven up to 175F 350C

Prepare a loaf pan by greasing it

Grate the zucchini and mix it with the flours, cocoa powder, baking soda, baking powder, and salt in a large bowl

Melt the coconut oil and add it to another bowl

Then add the almond milk and vanilla extract

Just mix the wet and dry ingredients together

Mix in the chocolate chips and cherry pieces

Put batter into the loaf pan that has been prepared

Put it in the oven and bake for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean

For 10 minutes, let the bread cool in the pan before moving it to a wire rack to cool all the way through
