Sweet Potato Paletas AIP



Enjoy these creamy and slightly sweet paletas that are made with healthy sweet potatoes and coconut milk. These popsicles are great for a cool treat on a hot day, and they are also AIP (Autoimmune Protocol) friendly.

Ingredients:

  • 2 cups cooked sweet potato, mashed
  • 1 cup coconut milk
  • 1/4 cup maple syrup or honey adjust to taste
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • Pinch of salt

Instructions:

Mashed sweet potatoes, coconut milk, honey or maple syrup, cinnamon, ginger, and salt should all be mixed together in a blender

Mix everything together until it's smooth

Put the mix into popsicle molds

Put in the sticks and freeze until solid, which should take at least 4 hours

Once the popsicles are frozen, run the molds under warm water for a short time to get the popsicles out

Serve and have fun!
